
I mentioned my elderly neighbor in my tomato post
here. I honestly didn’t think he would be gardening this year but happily, he’s been bringing me bags and bags of fresh spinach. I froze a good portion of the spinach and will use it down the road for spinach dip, spinach quiche, or maybe even creamed spinach.

In the meantime, the spinach is so fresh and the weather is so nice, I had to make a spinach salad. The recipe I use is from
food.com and the glazed pecans really make the salad.

To glaze pecans, you simply cook them with sugar in a non-stick frying pan. Easy and yummy!

I used granny smith apples cut into very thin slices but any type of apple will do.

The original recipe calls for red onions but I used what I had – regular brown onions sliced very thin.
